Here is the spring, with the return of its savours, the time of the awakening of the senses, the tastes and the desires. To open this new season, we chose to make you discover a young creator of company full of life, ideas and craftiness to awake your papilles and your senses through her creations of assemblies of spices.

Rediscover your kitchen, your dishes of every day, amaze, enchant, experiment with her a new road of the tastes and the savors. A true second reading of the tastes within the reach of all Stéphane Ceillier, mother of three children, is creative of the young company, ESPRIT & GOÛT, Assembleur de saveurs. Since near one year, she creates in her laboratory, ceaselessly, new easy and playful approaches of spices to allow all a simple and practical use. Already more than 39 (assemblies)…

How came to you the idea to create Spirit and Taste?
I always liked receiving, without spending for all that my evenings to make the shuttle kitchen-lounge. I so developed a simple operating mode towards the cooking. Simple, fast, economic, ready for all the eventualities. Then one day by returning of a dinner, it became an evidence. It was necessary to help the others to free itself from the complexity.


Resolve this complexity by supplying the essential elements of a recipe to make only a playful and creative act. To have the time of the sharing, that of the conviviality with friends and guests. The aperitif was quite naturally stand out, apere to open in Latin (editor's note: laughs).


These creations are the reflection of your taste and know how, but are they to the reach of all?
Yes, oh yes!!! The idea, it is because everybody can make it, really everybody. Not need to have a over-equiped kitchen, nor to have learnt by heart all your cookbooks. If I can characterize my creations, it is simplicity, playing, speed and the good on, the taste! The cooking is a creative game.
To realize one of the aperitifs, or the pastas to be spread, the market is very simple; or then you already have everything in your bottom of kitchen. Do not say to me that you have at least no caster sugar, or some olive oil for example.


Concerning the tastes, if they can seem complex, they are especially intended to make the road of the discovery or the rediscovery of spices, this territory so vast which opens the world of the pleasure and the creation. Moreover the range of our creations fills out ceaselessly, each can thus find his happiness and be allowed tempt. Finish it with the salt-and-pepper, go farther, you release!


Is it really so complicated?

For the daily life? But not! It is just necessary to agree to put itself in break, to go out of these customs, so that all which seems commonplace and repetitive becomes creation, invention, game and especially pleasure. Tame what tempts you, to buy selections of spices to discover them.


Make simple, but always in mind of sharing, it is there that the secret lives: please the others. It is there so of our preparations, a quite simple market, in most five minutes of preparation. Here are the constraints which we fix during the development of our ranges.

How to define your creations of assemblies?
Simplicity, playing, lowness and efficiency. We always aim at the simplicity of realization. A friend beautifully qualified all this alchemy of the taste of “trempouille”. Do not say to me that overturn a bag is so complicated! For the playful side, the cooking has on necessarily to stay one moment or becomes again a moment of creative enjoyment.


For the moderate side, who today does not look at the cost of ingredients?
Then to make a home-made aperitif for 7 euros and a home-made cakes of aperitifs for 4 euros, it remains reasonable. For the side efficiency, look, we prepare the aperitif. Since how long we began? 2 minutes? And it is ready to be put in the oven, hop hop hop...


What is your objective?
To allow all to realize playful and simple gustative creations. But also what each is convinced that to cook, as to eat are above all pleasures, simple pleasures, and the taste plays an essential role.


Have you craftiness around spices and spices?
Have those whom we love to the reach of hand, and those whom we want to try in front of to fall never in the ritualism, that goes with. Forget all that you believe to discover, to create your palette of taste and association.


How are perceived your creations?
I am pleasantly surprised … They are perceived as a liberation: the complexity is resolved, then everything is allowed, and especially the imagination. And so we chose to propose a selection of spices to show that everybody can realize, or on the basis of our assemblies, to realize these creations among which many do not take place any more.
